A great classic of Neapolitan cooking: simple, tasty and authentic. Perfect as a main course, as a sandwich filling or as a pizza topping.
Ingredients for 4 people
- 1 jar Italica Neapolitan-style friarielli
- 600 g fresh sausages (preferably pork, hand-cut style)
- 2 garlic cloves
- Extra virgin olive oil
- Chilli to taste
- Salt to taste

Method
Cook the sausages
- Prick the sausages and brown them in a pan without adding oil, so they release their own fat.
- When they are nicely browned, cover with a lid and cook over a low heat for 10–12 minutes.
- Set aside.
Prepare the friarielli
- In another pan, heat a drizzle of oil with garlic and chilli.
- Add the Italica friarielli , already drained, and let them take on the flavours for 4–5 minutes.
- Adjust the salt if needed.
Bring it all together
Return the sausages to the pan with the friarielli and cook for another 2–3 minutes to blend the flavours and aromas.
